Nicaragua
Los Altiplanos
High in the mountains of Jinotega, Los Altiplanos sits inside the Datanli El Diablo natural reserve, where much of the land is protected forest and the coffee grows beneath a thick tree canopy in volcanic, loamy soil. The farm is run by a producer from a coffee-growing family with more than a century of experience, and washed processing keeps the cup clean so its sweetness and fruit show clearly.
A cool morning in a cloud-forest orchard — caramel warming at the edges, a crisp red apple bitten fresh, a squeeze of citrus, and toasted almond lingering after.
Ethiopia
Chelbesa Yirgacheffe
Chelbesa is a small farming community inside Ethiopia's Gedeb district — the true birthplace of the "Yirgacheffe" name. Farms here average under two hectares, tucked into semi-forest beside banana and enset crops, worked by families who've farmed this land for generations. Cherries are hand-picked, floated for ripeness, then dried slowly on raised beds for up to three weeks — patience that shows up directly in the cup.

Australia
Jack Murat Estate
In 1929, a sixteen-year-old immigrant arrived in Far North Queensland; locals, unable to pronounce his name, called him "Jack." Nearly a century on, his descendants turned the family's land near Mareeba — once tobacco, then cattle — into one of Australia's only single-estate coffee farms, grown in rich volcanic soil under tropical sun and monsoon rain. Homegrown coffee makes up less than 1% of what the country drinks, making every bag a genuine rarity.
Ripe peaches straight off a tropical tree, honeycomb slipping through, and a square of milk chocolate melting slowly in the warmth.
Colombia
Regional Apía Decaf
High in Colombia's UNESCO World Heritage coffee region, the mountain town of Apía sits at 1,630 metres, ringed by three national parks. Coffee has anchored this community since its founding in 1883 — grown today by smallholder families on the same fertile volcanic slopes their grandparents farmed. This lot proves decaf doesn't have to mean giving up character.
